What food were the kids cooking up this episode???
I love when I find a recipe that reminds me of food from my favorite restaurants. There was a place where we use to live, called The Flying Yoke, that was obviously a breakfast place and they did all kinds of egg sandwiches. I make it a point to go to go every time we go back and visit. Paisley found a basic egg sandwich recipe, pretty simple. I make them so I pretty much knew what to do. I don't make them as often as I used to, but we had a breakfast for dinner night. The recipe she found gave me a stellar idea. She said use Texas toast. Well, we make garlic toast every week for spaghetti night and I buy the frozen kind made on Texas toast. Soooooo, I used that as the bread, O... M... G... amazing. We added bacon, smothered them in mayo and BBQ sauce. I avoid (at all costs) making bacon on the stove, so I heat up the oven to 400 degrees and put the bacon in for 20 minutes. When you'll first open the stove you will immediately think, crud I brunt the bacon. We like bacon crispy so this method makes it perfect.
I asked Paisley what she wanted to do on the side of the Bacon & Egg Grilled Cheese Sandwich and she said hashbrowns or something like that, so we looked a little harder and found these hashbrown waffles. We just happen to have a small waffle maker. I would have never thought to use it this way. I don't think I can ever make plain ole' hashbrowns the basic way again! Add a dollup of sour cream and some chives. I made bacon bits in our 3 quart Instant Pot. Came out beautiful. It's so easy, cut the bacon with scissors (yes, you read that right) into bite size, put into Instant Pot on meat for 20 minutes. You get perfect real bacon bits without the mess.

I'm very surprised how far Paisley has come since starting this. She's calmed down and I don't have to tell her to stop doing things she should obviously not be doing in the first place. Like licking steak knifes! This all started because I wanted my girls to know what they're doing in the kitchen. They almost lost me so when my son and daughter-in-law came to live with us, I realized I need to give them the knowledge in my head. See my daughter-in-law's mom (which I love lots) is a fantastic cook. When Penelope got here though, I realized just because her mom can cook doesn't mean she just picked it up too. Kids aren't studying what us parents are doing. They are starring at screens and hoping to gain followers for the wrong reasons. And I should have known, my mom doesn't cook but I taught myself. Either way it's paying off.
