Bang Bang Shrimp &
Garlic Sesame Noodles Taiwanese Cucumber Salad
Our whole family likes seafood so I was thrilled when I stumbled upon this recipe. You may have notice we've made other recipes from this blog but I found this recipe, like the other ones, on Pinterest. The funny thing is I didn't go searching for her, it just happened. I guess we like her food. It was a little work (just time consuming) making the shrimp but well worth it. Came out pretty good. Paige was excited, she loves shrimp. One thing I will say about putting the breaded shrimp to rest in the fridge, is do a single layer. If you stack the shrimp on a plate and to rest in the fridge, we learned, they stick to each other and pull the batter off the next layer. Better to rest in a single layer.
Both the shrimp and cucumber call for similar products. I only found one at the local grocery store but also I found them on Amazon and you can decide.
We put the shrimp on a bed of noodles and that was pretty yummy blend. I will say the kind of noodles matter. I got one box of Annie Chun's Pad Thai Rice Noodles and they were great tasting but made enough for one bowl. Fortunately my husband was out while we were making dinner and he picked up more, but he got a different kind and they were not so good.

As usual I wanted veggies or salad on the side, so I went looking for something with an Asian flare. Beside her name and the fact that she's Asian I didn't connect cucumber salad as an Asian thing. After reading the blog post I learned she got the recipe from a restaurant in Taiwan. It was simple and yummy. The blog is kinda neat, it's a correlation of writers, not written by just one person. There is a variety of writer's. I think that's pretty cool. I recommend a 2 oz (or 4 tablespoons or 1/4 cup) measuring cup for liquids, you just need a couple tablespoons. It's much easier then a measuring spoon. Paige put the cucumbers in a baggie (using that baggie stand, super useful) and put the sauce on them in there and put them in the fridge to marinate.

It was a lot of work to do 3 recipes for dinner but good thing for Paige to see what goes into making dinner come together. She is really enjoying learning to cook.
