Paisley loves this pizza at California Pizza Kitchen, so when she found it on Pinterest, she had to make it. Boy am I glad we did. The recipe was on Amanda Cooks And Styles blog. She has you sauté the onions to give them more taste
then just plain onions. 😋 We are at my Moms so it was good for the girls to see how to make do with cooking in someone else kitchen. We cooked the chicken in my Moms Instant Pot. She loves hers as much as I love mine. It makes cooking chicken so easy. Put it on sauté, place in the chicken, sprinkle with salt & pepper, brown each side and then put it on pressure cook for 6-8 minutes. Done and shreddable. Make sure you use olive oil. I forgot and the chicken stuck to the pot. To make matters worse my mom had the flimsiest tongs, so they were a struggle to flip.
We baked the pizza for 13 minutes like she said too and they were still a bit doughy, so we cooked them for an additional added 2 minutes. They needed just bit more, so we gave them 2 minutes on broil. 👌🏼It's so good for Paisley too se how to adapt. It's a skill she'll be glad she knows when she's out on her own.
I couldn't believe Paisley picked this recipe all by herself, of course, she loves carrots and covered in sugar to boot. We are at my Mom's house and she tries to stay away from sugar so I forgot to bring brown sugar, like the recipe calls for. She only has coconut sugar, which I'm familiar with because I did paleo years ago. So that's what we used and honestly they were still amazing. Kids macked down on them and my Mom made herself a plate. So if you don't want all they sugar but you're desperate to get your kids to eat veggies, this was a great discovery we made.
My girls know when they are picking dinners there has to be a side with it so when she found the pizza, she went looking for a veggie. Letting them pick what we are making is so good for them. They are going to know how to plan out dinners. How to match dishes together. They will thank me when they are older and before to long they won't be asking me "what goes good with..." they will just know.
Paisley loves being at Nana's house. She was thrilled to cook in her kitchen. I was a little frazzled trying to find my way around her kitchen but I managed. If we had been at home I would have used my handy baggy opener. My Mom and I were talking about it while filming and I told her I had extra and she could have one, she was so excited. It really does make it so much easier to fill a baggy.
Paisley had no problem finding her way around Nana's kitchen, me on the other hand, not so much. I can find my way around my own kitchen with my eyes closed, except when my kids don't put things back where they belong. My mom doesn't need a whole lot, as far as appliances go and is a picky eater anyway, so there was slim pickings, but way made do.
