Hi, I'm Penne. I'm a wife and mom of three. When I almost died in 2021, I was determine to give my kids all the tools they needed in life, starting in the kitchen. I am an avid foodie and of course, married one. I love to cook and our whole family loves to eat, so I'm teaching my little foodies what I know. We hope that our story and videos inspire others to get their families in the kitchen and make memories.

Beef Meximelt & Skillet Mexican Street Corn - Kids Cooking

Like most young adults, fast food used to be my go to, but as I have progressed on the path of life, (like how I worded getting older 🤣) I decided to save money and eat at home. Having a big family helped motivate me. It's expensive to feed everyone, even with fast food's dollar menu. I love to cook so it wasn't that hard to commit to. I'm trying to train my son to pack his lunch the night before work. I've been training him since Jr high. He's 21. He'll learn eventually. Hopefully!


He was stoked about these beef meximelts. He stuffed his face full last night and brought a couple for lunch today. So did Paige. I'd hoped so, she picked the recipes. This was all her. She did pick one of my favorite side dishes, street corn. Everywhere we go and I see roasted corn of any kind, I must have a cob or 2. All 3 of my kids are right behind me. I love this pic of me and one of my favorite partner's in crime, at the strawberry festival years back, eating my favorite fair foods.


They both turned out so good. Gonna make more of the melts and seal them in my food saver and freeze them so everyone can take them for lunch. One thing I've learned about sealing is only to go about 90-95% of the way, all the way squashes

the food down too much. I love my sealer, this thing gets used, that's for sure. Has saved me so much money. Just make big batch of something like this and have lunches for days. Did I mention this is a Taco Bell copycat. My husband pointed out, while we were eating, it's not exactly the same. The original one was like a soft taco and a quesadilla had a baby. 🤣


I used my 8 qt Instant Pot to make the meat, yea drain the oil like she says, the melts were swimming. I did, however, think of a good trick. I put everything in the Instant Pot and mixed it together. Instead of adding a spoonful of each thing to a tortilla. I melted a couple big handfuls of cheese and mixed the pico de gallo into the meat. I even added sour cream. Then just took a big scoop and but it in a warmed tortilla. Bammmm! Not as fancy looking. but tasted just as good. Paige loves learning all these tips.
