What food were the kids cooking up this episode???
So my hubby was on TikTok (where he follows food and business hacks 😂 and then tells me I should try them) and he found this hearty Mac N Cheese by Pepper Belly Pete. He jumped on the band wagon begging for me to give it a try. I was easily convinced. In fact now that we have gotten the hang of things for our channel, everyone has their input. I've got recipes pilling up of food the family wants to try. If there is something you would like to see us make. Be sure to email us. (hint hint* links in the header) Back to the mac... Pete, he don't got a blog (that I could find) to get the recipe so I listen to his video 100 times so I could type it all out. Your welcome. See recipe below. He does make his own hot sauce though, so that is linked to his name above. I ordered my husband some, he's so excited.
I hope you like cheese! I have never seen a recipe with so much cheese. I mean I love cheese, probably more then I should but oh my! Sure tasted delicious though. So creamy. I'm a cream cheese fiend. I hate to admit when I was younger I'd eat it by the spoon full. I admit to it though because while cubeing it up, Paisley asks for her own cube. 🤣 Like mother, like daughter. But seriously so much cheese! Mild cheddar, sharp cheddar, American, mozzarella, cream cheese and there is even Cheez-it's. I added bacon to give it some meat for my hubs - the meat eating cave man. 🤤 Hands down I'd do it again.
With all that cheese I had to find something healthy to break it up and help it digest. I've been trying hard to do anything but just plain ole' salad. So I found Healthy Broccoli Salad. Paisley is a broccoli fanatic, which is funny for a 10 year old but I knew she would like it. My hubs was hesitant but ended up liking it. I though, seriously loved this broccoli salad. I didn't let any of it go to waste, I ate all the left overs. Practically licked the Tupperware container. Such a good combination of flavor. Apples, blueberries and broccoli. I would have never have thought to put all of those together. I had ordered the dried cranberries and sunflowers separately, Instacart got the sunflowers but brought trail mix with cranberries. Didn't quite work. Fortunately, I have a salad topper I got at Costco that is just cranberry, sunflower seeds and pumpkin seeds and that worked perfect.
The expressions on Paisley's face say it all except for the one where she's about to smash the salad ingredients. I'm not sure what's happening but it makes for a funny photo. I just roll with their shenanigans. They're crazy.
Like I said, I could not find a website for Pete, so I listen to his TikTok (he's pretty funny... "watch-your-sister sauce" 🤣) I watched the video a million times and typed up the recipe and instructions. Thanks to Pete, I learned about making a roux (pronounce roo). Never heard of it before but now I know. And as my husband always says "knowing is half the battle."
Mac-A-Licious
Ingredients
1 lb. elbow noodles
8 Tbsp butter - halved
¼ cup grated onion
3 garlic cloves - crushed
1 tsp smoked paprika
1 tsp cayenne
4 tbsp flour
1 tbsp Worcestershire sauce
2 cups half n half
4 oz cream cheese
2 cups fresh grated American cheese
2 cups fresh grated mild cheddar cheese
1 cup grated mozzarella cheese
2 cups crushed Cheez-its
½ cup shredded sharp cheddar cheese
Directions
Preheat oven to 400 degrees
Add salt to the pot of water and boil.
Cook noodles for 6 minutes.
Drain water and fold half the butter into pasta.
Melt the other half of butter in a pan. Add onion, garlic, paprika, cayenne. Stir until mixed together and bubbling.
Turn flame down and fold in flour. Add Worcestershire sauce.
Slowly add the half n half, stir often and let roux simmer.
Add in cream cheese, let it melt. Add in American and mild cheddar cheeses, slowly.
Once roux is creamy, turn off the stove and add in noodles. Stir together really well.
In a greased casserole dish add half of the pasta mixture.
Sprinkle mozzarella cheese all over. Cover with the other half of the pasta mixture.
Sprinkle crushed Cheez-it's over pasta and then sharp cheddar cheese.
Bake for 20 minutes.
