What food were the kids cooking up this episode??? Paige totally loves Mexican food. So is it any wonder she would pick Mexican Pizza & Mexican Coleslaw?!?!
I knew I had achieved a small victory when the girls got excited to pick recipes. Paige saw the Mexican pizza on Pinterest and she let out an excited screech followed by "You can do that???" I just love the creative folks out there that love cooking as much as I do and have posted it so I (and my girls) can find it. Even my friends kids and nieces and nephews are excited we are doing this and send me recipes. Not to mention, ask if they can guest star. To which I am absolutely thrilled to have them and this summer there will be many kids making an appearance. Anyway when Paige found this she was extremely eager to get cooking.
It turned out lip-smacking good. We love TexMex food and it's pretty simple. Another recipe for my girls (and myself) to file in our recipe box. She found this Mexican coleslaw to put on the side. I love coleslaw so I was pumped to try it. It did not disappoint! I threw some tortilla chips on top to dress it up. Such a great remix of an old common recipe. We are all about trying food from different cultures. There's this food based series on Netflix I watched when I was in the hospital called Street Food. There are series of the show based in different cultures/area of the world and I came home and she and I watched it together, that's really what got me going with this idea. When I saw that my girls loved food as much as I do and knowing they almost lost their Mom, I thought "I know how to cook and I want them to know how to cook." So as soon as I could tolerate standing up for a good amount of time, we got started!
My salad tongs got broken so I had gotten new ones and Paige was excited to see them. She is already an old married lady like me. 🤣 Gets excited about a new vacuum or kitchen appliance or you know, salad tongs. They work really well. The conversation we have while we are in the kitchen crack me up. A lot of times I'm focused on the task at hand and my disabilities make it hard for me, so I tune out. I don't mean to. Like in this episode my nose/ear issue was flarin' up and I was sniffling non-stop and Paige t̶a̶l̶k̶i̶n̶g̶ ̶n̶o̶n̶-̶s̶t̶o̶p̶ was telling me about something at school. I didn't have the brain power to interact and I have been making a conscious effort to do better.
