Mini Meatloaf
I don't make meat loaf a lot but that's about to change thanks to this recipe. The recipe Mini Meatloaves by Muffin Tin Mommy is exactly what I needed to get excited about making meatloaf. Not only is it easy, lets face it I only do easy, but its perfect potions. I made a printable recipe for it for Paige to follow. If I can make a suggestion for her, printable recipes would be it. But she does tell you the ingredients and instructions. She has a picture of one with mashed potatoes on top piped on like frosting, makes it look like a cupcake! Paige deemed these the Meat Muffins, your welcome!
We paired it with mashed potatoes and cauliflower rice (which I added more corn too) from Costco. Of course we made brown gravy for the potatoes. Stuck the meat muffins on a glob of taters and smothered them both with gravy. Mmmmmm so good. The Kitchen Aid, I got at a garage sale years ago and is missing all the rubber feet, is what we used to mix up the meat. I'm not sure how the new ones are but there is no slow setting on this thing. Meat was trying to escape from the bowl.
We doubled the recipe so I split the meat mixture and sealed it in my FoodSaver Vacuum Sealer. That thing is a must have, its has gotten its use. I've had it for so long, its stand up and I couldn't find anything close so this is as close as I found.
I love taking still shots of the shoot. They really show how much fun we have during recording. Paige and I realized all the still shots I use, on YouTube for the thumbnails, I'm looking at her with a very puzzled look on my face. We are trying to use multiple cameras but it didn't go so well, it wasn't turned on, So we are side ways talking to the phone that isn't recording.
