Today in my homeschool cooking class we (because I learned it too) learned how repurpose Top Ramen in the Chow Mein. Which was a fabulous side dish for the Mongolian Beef.
I'll just be filing this Chow Mein recipe under new regulars. Seriously a fantastic idea to use Top Ramen noodles, which are an Asian food knock off, in a copycat of Asian-ish fast food . It's a Panda Express copycat of their Chow Mein. It turned out so good, but I will say don't over cook the noddle's, in fact undercook them just a bit if you want them more crunchy. They cook fast, only for 2 - 2 1/2 minutes tops and we didn't pull them out of the water right away because I was trying to cook chicken. So they were a little soggy for my husbands liking. He said he likes them on the crispier side. I added cut up broccoli and shredded carrots. Mmmm I might go make some after I write this post.

The awesome thing about putting on the hat of home ec. teacher for your kids, is you get to learn new things also. I know a lot about cooking and just life skills in general. I've ran my own household for for 20-ish years (ran it well for like 13 🤣), had my own bookkeeping business for 13 and have been in the kitchen for 28 years. Geeze when I read it that way I feel old. Anyway, my point is, that despite all my hands-on experience, I'm always learning new things. Even small things. Things I'm surprised I didn't know or think of on my own. But these little things my kids will have in their our box of knowledge. Things, that when they are adults, standing in their kitchen, thinking what can I make for dinner, this will surface from the back of their minds and they will be like "Oh yea one time with mom we made...."
Handy Dandy Products We Used
I had never made Mongolian Beef before but I understood how to do it. That's the beauty of my kitchen knowledge, I don't have to have ever done it, to understand how to do. And I get to pass that insight, onto my girls. Don't be afraid of something you've never done. Read the instructions and think about what you need to do. I had talked about the process with Paisley before so she had an idea of what we needed to do. I'm not afraid to try something in the kitchen I've never done or don't quite know how to do. I'll do anything once both cooking and eating. And in life in general. I made a wrong turn, though, with the beef and it came out a little thick and gritty. I know what I did, I added to much cornstarch in the sauce. I'm part blind in my right eye, so I didn't realize the 7 tablespoons were for drudging the beef not the sauce until to late. Still turned out good.
