Today on our Homeschool Cooking Class, Paisley's cousin's in town and she picked out to Oreos recipes for them to make, gluten free Oreo's to boot. She picked Oreo Mousse and Mint Cookies & Cream Treats.
My nephew came to play and he was excited to make treats. We had to be careful in choosing recipes he could have. He and my sister-in-law have Celiac Disease. It's more than just a gluten intolerance, they (especially him) will get violently ill and be puking all night if they have gluten. 😥 Like they have to be super careful when they go out to eat and ask tons of questions just to make sure nothing with gluten hasn't crossed paths with what he'll be eating. So Paisley was super excited to show him the gluten free recipes she found. Did you know they make gluten free Oreo's??? They do and they taste the same as the regular ones. So that's what we are using for both the recipes.
The Mint Cookies & Cream Treats are just like rice Krispy's treats only with crushed up Oreo's, we used the GF mint ones and oh my. So good. I've always been a rice Krispie's treat fan and this took the cake. Paisley LOVES Oreos, so anything with them she wants to make. She was over the moon when she found out Scott could have them and loves them too. She is 6 months older than him and they look like twins. I always give my husband a hard time and tell him he had kids with his sister. 🤢 When ever we are in public together, we get asked at least once if they are twins.
The treats came out great but the mousse, eh. I don't know what we did wrong. It clumped together and wasn't fluffy like she said it would be. I mean it didn't taste terrible, but definitely wasn't what it was supposed to be. I was bummed because I wanted super awesome treats for my nephew and we flopped on this one. I mean I know we aren't going to get em all but I wanted to for him. I guess I shouldn't try things I've never attempted before with friends or family guess starring. Got a little too big for my britches. I had the idea of putting it in muffin molds before it went in the fridge. The kids were calling them mousse muffins.
