On today our Homeschool Cooking Class, we are taking a stab at every kids favorite camping dessert, reconstructed, S'mores Pie.
What kid doesn't like s'mores??? I know I have fond memories, as a kid, roasting marshmallows around the camp fire. We have
made it a tradition with our kids. Only I don't do s'mores the traditional way. I use 2 of the Keebler Fudge Stripes Cookies, big hit and easier to put. I let the kids roast marshmallows and slap it in between two cookies. Still messy but easier to eat and pack up for camping. Anyway when the girls picked this I was stoked. It's so good and is great heated up, we ate on it for over a week!
What a great concept for a pie! I love recipes of basic old-school stuff like "s'more" made into stuff like this. The kids have chose (in the past and up coming) a bunch of these recipes. Making me reminisce! I'm not much of a baker but the kids are determined to change me. I didn't even have a pie dish, I had Instacart picking me up one while grabbing my groceries. 🤣 Sometimes I'm teaching myself to cook or bake or techniques. It's a fun learning experience for all of us.
We may have gone over board with the marshmallows. I pulled the pie out of the oven and white lava was bubbling over the side. 🤣 It was delicious though. A little crispy, the perfect amount of burnt. Like when roasting marshmallows, there is a science behind the perfect amount of "toasting". I will be doing this recipe again for sure. It's been bookmarked! This Kitchen Aid Hand Mixer is coming in useful. How did I manage with out it??? Why do I need so many mixers? 🤣 I use them all though. They each have their purpose and function differently. I am obsessed with Kitchen Aid though. I have a stand up too and tons of attachments for it. My husband doesn't care as long as I'm using it. I like to cook and he likes to eat, so it all get used!

1 C unsalted sweet cream butter, softened
1 C sugar
2 eggs
2 tsp vanilla
3 C flour
2 C graham cracker crumbs
2 tsp baking powder
1 C chocolate chips
1 C chocolate chunks
1 ½ C mini marshmallows
