Sloppy Joes Casserole &
Refreshing Cucumber Salad
Sloppy Joes have come a long way since I was a kid and Paige is determine to find them all! I didn't make a lot of changes to the casserole, other than doubling the pasta and liquids so it went farther. For the cucumber salad I added plain Greek yogurt and goat cheese. I loved it. Nice change of pace from always having green salad. The kids were eh. They weren't crazy about the lemon, so maybe I'll do a little less of that but I'd do this again. The casserole too. That is great comfort food.
If you haven't tried using a Mandolin Slicer to cut up food, you have to. It's a time saver. You'll see me using mine to cut up the cucumbers. When I went to search the links to share with you guys, I found these two and I'm ready to invest in both!
I need those gloves. God knows we have eaten chucks of nails and finger! 🤢 But I'm leaning towards the one with the box. Trying to balance it on the side of a bowl when your in a rhythm with the slicer is like playing chicken with your fingertips. So in conclusion, it's a handy little tool, that saves time but the gloves and box leave your fingertips intact.
I was a little out of it while making dinner but Paige was all about it. While editing I found these keepers. 🤣 It looks like she's holding a cup of pee but I promise it's just chicken broth.
