Sourdough Pop Tarts
We were petty excited to make these. And pretty excited to eat them! Paisley loves sourdough. When I was in the hospital over a year ago, my bio explains why, my mom's longtime - bestie, Nanny Jo, came to help with my kids. Can not say thank you enough! While she was here she taught them about sourdough. Paisley was an instant fan and even has a starter. So I surprised her with this yummy little treat.
I had to call Nanny Jo, as we call her, to ask her what in the world I was doing. Paisley kept telling me add flour and water. Too what?!?! I kept asking her. I didn't understand because I wasn't here for the baking lesson and I knew nothing about sourdough or even what a sourdough starter was. I should have just read the book Nanny Jo sent Paisley. Soooooo a basic sourdough starter is:
2 cups all-purpose flour
1 teaspoon salt
3 tablespoons sugar
1 tablespoon dry yeast
2 cups lukewarm water
From the book: "There are two ways to obtain a sourdough starter: By mixing the simple ingredients together yourself or by obtaining a gift of starter from a friend or family member. The older the starter, the more tangy the flavor. I have used both new and "aged' starters with success."
I knew Paisley had a starter she had been keeping in the fridge and would take it out to mix it but that was all I knew. Nanny Jo helped fill in the gaps. When your ready to bake you add equal parts of flour and water to the starter the day before you need it. So if the recipe calls for 1/2 a cup of starter, add 1/2 a cup of flour and 1/2 a cup of water to your starter. Cover it with a towel and leave it out over night. If it's not bubbling, she said add some yeast. That whole process is what they call feeding your starter. Now it made sense.
So I fed her starter the night before and we were ready to bake. Now back to the baking. Once Paisley grated the butter (yes you read that right, like with a cheese grater) we had to mix it into the flour mixture. The recipe said to use a dough blender to do so. Again didn't know what it was, so I googled it, turned out I own one. Wish I had one like this though because it seems easier then what I have. Mine is wiry and the dough gets caught. We got past it though.
Once we did, it was a little easier and after it set in the fridge, it was onto the fun part! Rolling out the dough and stuffing the pop tarts! It was fun and they were super tasty. This recipe make 10-12 and they were gone in minutes. It's getting filed in the must do again soon category! Paisley is getting quite the YouTube personality. It was shinning.
