Hi, I'm Penne. I'm a wife and mom of three. When I almost died in 2021, I was determine to give my kids all the tools they needed in life, starting in the kitchen. I am an avid foodie and of course, married one. I love to cook and our whole family loves to eat, so I'm teaching my little foodies what I know. We hope that our story and videos inspire others to get their families in the kitchen and make memories.

Spam Musubi & Green Beans with Ginger & Soy | Homeschool Cooking Class

Today on our Homeschool Cooking Class, it's part 2 of the Hawaiian challenge! Paige went first, so it was Paisley turn and she hand picked the Spam Musubi. I found something I thought she'd like to go on the side, Green Beans with Ginger & Soy.

Her Daddy had go to help pack up an older Hawaiian woman from our congregation. She made Spam Musubi for all the people that came to help. Paisley fell in love and begged me to make it. So I found a recipe and watched a few videos. I don't know that I have ever eaten spam. My mom just wasn't big on it. Apparently though, it huge in Hawaii. They have it in the airport and gas stations. Sadly I've never been to Hawaii, it's on my bucket list. That's just what I've been told and have read. I do love Sushi though and it was along the same lines. So I understood how the make the rice sticky. Got to use the air fryer for the spam. I had seen a version floating around TikTok with cheese in it. So we added it.


Instacart however, said the bigger seaweed was out of stock, so they brought the snack size ones. Turns out you cant wrap with them. So I just stuck a piece on bottom and called it good. Paisley was more than happy to eat the rest, even the wasbi favored ones. This kid LOVES seaweed! She is learning how to work with what ya got. I had the brilliant idea to mix teriyaki sauce with miso paste, mmmmm, so good. The blogger has you boil down the teriyaki anyway, so I just mixed it in at that point. The poor blogger we butchered his name. I apologies, your recipe was fantastic though.




With all that sodium we needed some kind of veggies. I found these green beans that had the perfect complimenting flavor. Very simple. The hardest part is trimming the beans. Paige actually loves green beans, so both girls got greens. I found minced ginger. I don't know about you but I have the hardest time peeling ginger or maybe I don't have the patience. Either way this makes it quick and easy and you can keep the tips of your fingers.


So who won the challenge? Family says...


It was a tie!


We couldn't decide!! They we're both awesome. Perfectly executed and really different.

Below are the recipes, the way they worked for us.




Ingredients


1 (12-oz.) can Spam

1/2 cup teriyaki sauce

16 strips nori, snack size

8 Babybel original flavor

2 tbsp miso paste


Instructions

  1. Remove Spam from can. Rinse can and reserve. Cut Spam into 8 lengthwise pieces and transfer to a large bowl. Add teriyaki sauce, turning to coat. Marinate 15 minutes.

  2. Arrange Spam in a single layer in air-fryer basket; reserve marinade. Cook at 400°, flipping halfway through, until glazed and warmed through, 6-8 minutes. May need to do in batches.

  3. Combine rice and water in rice maker. Cook until liquid is absorbed and rice is jammy and slightly overcooked (which will make it stickier)

  4. Meanwhile, transfer reserved marinade along with the miso paste to a small pot and bring to a boil. Cook, stirring occasionally, until thickened, about 2 minutes.

  5. Cut Babybel in half long way.

  6. Lightly coat Spam can with nonstick spray. Stuff can with about 2 tbsp rice, firmly pressing to pack into can. Stick two Babybell slice on top.

  7. Cover with another 2 tbsp rice. Pack in tight (if rice doesn't hold its shape, freeze until firm, about 10 minutes). Lay down nori on pate, turn over can on top of it (lightly tap if rice doesn't fall out right of the can away rice from can). Cover with another piece of nori.

  8. Top with Spam, brush with teriyaki/miso sauce and sprinkle with furikake.



Ingredients


2 tbsp soy sauce

1 tbsp water

1 tsp minced ginger

1 garlic clove, minced

1 pound green beans, trimmed


Instructions

  1. Combine the soy sauce, water, ginger, and garlic in a sautéing pan.

  2. Bring to a simmer over medium heat and cook for about 3 minutes, stirring occasionally, until the aromatics begin to soften.

  3. Stir in the green beans.

  4. Cover and cook until steam just begins to escape from under the lid, about 5 minutes.

  5. Reduce the heat to low and cook for about 6 minutes until the beans are just tender.

  6. Remove the pan from the heat and stir in the sesame oil.

  7. Serve immediately, they got saggy quick.
