Today on our Homeschool Cooking Class, we got Cookie Monster on the brain! We got Stuffed Cookie Monster Cookies & Cookie Monster Ice Cream.
First off, I loved both these recipes and how could you not?!?! They are both loaded with cookies. They are both very blue as well. I let Paisley go crazy with the blue food dye. Ever since we did the Cotton Candy Fudge, yes you read that right, I've started using Lorann Oils products. I like them. Paisley had fun though, maybe a little too much. They were very blue! I don't let my kids have a ton of junk food so when we bake I let them go a little crazy. Plus I'm a sweet fiend. So I can't have desserts in the house because I will eat them. And so will they.
Those cookies though, I "had" to keep the bag of them in my room. They were so good, the kids were gonna eat them all in one night. Three kinds of chocolate chips and two kinds of cookies packed into these cookies. Quite literally they were stuffed. Things were falling off before I could get them in the oven. There was no more dough to stick toppings into! The dough itself was tricky. I had never done dough like this before, maybe I had but I don't remember. You cream the butter and sugars, add in the food coloring and then the flour. It was so thick. I felt like I was mixing forever.
The ice cream fought me. I have not been so fortunate with the ice cream maker. We put everything in, but when we put the condensed milk in, it froze to the bottom of the bowl. So I had to take y big bread knife and scrape it and cut it out. Maybe putting the condensed milk in the fridge might have helped. I don't know. I need ice cream making classes. Once we got it out of the bowl I used my immersion blender to smooth out the chunks. It was soupy by then. We put the cookies it and got it the freezer. Even though we had a rough go, the ice cream turned out awesome. Paisley couldn't get enough.
